RED LENTIL VEGETABLE SOUP
1-2 Tbsp. of olive oil or other oil1 small onion diced2-3 carrots diced2 sticks celery diced1 cup dry red lentils6 cups broth (chicken or vegetable)1 can diced tomatoes (optional)1 bay leaf1/4 tsp. salt1/2 red pepper diced
Sauté the onions in the oil. Add the celery and carrots. Sauté about 10-15 minutes. Add lentils, broth, canned tomatoes, bay leaf and salt. Bring to a boil then simmerAfter 15 minutes add the diced red pepper. Simmer for about 20-30 minutes or until lentils begin to fall apart.
